- Soak the dal in water and clean it.
- Add 2 cups of water, turmeric powder and oil to the dal and boil it until it is soft.
- Skim off the excess water and mash the boiled dal coarsely. Keep aside.
- In a pan, heat the oil. Add the chillies, mustard seeds, curry leaves, asafoetida and fry for 2 minutes.
- Add the chopped onions and fry until they turn golden brown.
- Add the brinjal, red pumpkin, drumstick, salt and 1 cup of water to the contents of the pan.
- Add the tamarind pulp with the jaggery and bring the mixture to a boil, such that the vegetables are cooked.
- To this, add the cooked dal, along with the tomatoes, sambar masala, and chilli powder and mix well.
- Allow the sambar to boil for 5 to 10 minutes. Remove from heat and garnish with the chopped coriander. Serve hot.
