How to Make Pista Sandesh

Ingredients: The following ingredients will be required to prepare Bengali Pista Sandesh:
  1. Half cup castor sugar
  2. Half cup of powdered pistachios that is Pista
  3. 1 litre milk
  4. 10 pistachios or Pista
  5. Half teaspoon citric acid
 Instructions:
  1. Boil the milk so that it may thicken a little
  2. Now mix the citric acid in some water and add it to the boiling milk. Wait till the milk curdles and it gets converted into paneer.
  3. Take out the paneer by straining with the help of a clean cloth and keep it aside to cool.
  4. When it cools, squeeze out the excess water
  5. Take a pot and roast the paneer and sugar in it for at least 4 to 5 minutes
  6. Take good care that the paneer doesn’t get burned, it should remain white. Its color shouldn’t change.
  7. After roasting grind it in a food grinder to make it even more soft
  8. Now mix the powdered pistachios to the paneer sugar mixture
  9. Now divide it into portions of same size and cut into desired shape square, round, diamond whatever you feel like
  10. Garnish with the whole pistachios and serve
This dish of Pista Sandesh is one of the most famous Bengali sweet dishes and now you have prepared yourself with one.

    • Soak the dal in water and clean it.
    • Add 2 cups of water, turmeric powder and oil to the dal and boil it until it is soft.
    • Skim off the excess water and mash the boiled dal coarsely. Keep aside.
    • In a pan, heat the oil. Add the chillies, mustard seeds, curry leaves, asafoetida and fry for 2 minutes.
    • Add the chopped onions and fry until they turn golden brown.
    • Add the brinjal, red pumpkin, drumstick, salt and 1 cup of water to the contents of the pan.
    • Add the tamarind pulp with the jaggery and bring the mixture to a boil, such that the vegetables are cooked.
    • To this, add the cooked dal, along with the tomatoes, sambar masala, and chilli powder and mix well.
    • Allow the sambar to boil for 5 to 10 minutes. Remove from heat and garnish with the chopped coriander. Serve hot.


      Sambar is usually served with boiled rice, idlis or vadas. A variety of chutneys accompany sambar.
